One of the good things about the colder weather is that you need no excuse to eat porridge. I think porridge is the ultimate healthy comfort food (turning a blind eye to the lashings of brown sugar or honey obviously).I buy linseed/flaxseed meal online from the Flax Farm to sprinkle on fruit & yoghurt and salads. I recently noticed that the Flax Farm also sell linseed & quinoa porridge, which is gluten free. Linseed is meant to be one of the great "super foods" and is particularly good for keeping you regular plus the good oil in it is apparently great for your skin and hair. Quinoa is also toted as a "super food" sometimes and is actually very protein rich.
More interestingly and importantly, the milled gold and brown linseed plus the quinoa flakes make excellent porridge with a different, slightly nuttier taste than your standard oats.
I made my porridge on the weekend in a saucepan with a pinch of salt, water and milk. I also added a banana and blueberries while it cooked. To serve I dolloped yoghurt on top, added fresh fruit, toasted seeds and honey. Hmmm, instantly warming!
